Penne a la Vodka

In a large sauté pan, saute red onions in medium heat in olive oil and butter until translucent. Add paprika, sauté until aromatic. Slowly pour in vodka and reduce until alcohol is gone, and most of the liquid is absorbed. Add canned tomatoes and simmer for 10-15 minutes. Toss in ¼ cashews and turn of the heat. Let sit for about 30 minutes or until cooled down and puree until smooth. Color should be a little orange, the flavor sweet but a little tangy from the tomatoes. Add additional cashews if needed.


Follow directions on package to cook Penne al dente.


Combine penne and sauce. Decorate with some basil leaves.

¼- ½ c  Cashews
